Kneading Breads

Seems like a strange time to crave homemade breads, in the middle of summer.  But I am, and so I have been making bread, rolls actually.  The first time I tried this, I only made 12 dinner rolls, but when they were gone in one dinner sitting, I planned to make a much bigger batch next time!  The second time I baked over 50 rolls and they are lasting a bit longer....I give it one more day till they are gone too.  (Kids sprouting like weeds this summer!)

Baking bread is such a project, with the mixing, the resting, the kneading, and finally the baking.  I had a lot of fun teaching MyGirl how to knead the dough by folding it towards her and pushing it away from her with her palms.  She enjoyed eating the dough and getting all floury.  As the rolls baked, the house had that homey smell, and I felt like a domestic goddess (until the dishes started calling my name).  Homemade bread is one of those things that is worth all of the work, even if the fruits of my labor are quite temporary (probably a complement to the baker, anyhow).

"Bread deals with living things, with giving life, with growth, with the seed, the grain that nurtures.  It's not a coincidence that we say bread is the staff of life."
Lionel Poilâne, French baker (1945-2002)
